  2. The tomatoes look amazing! Are you going to make Salmorejo? I read a great tip in the NYT magaizine: chop the seeded tomatoes and place in a bowl with 4 inches of french bread in pieces, 5 good-sized garlic cloves, 2 TBLSP sherry vinegar, 1/2 cup EVOO, 1 1/2 tsp salt. Here’s the tip: leave in the bowl for a good half hour, mixing periodically until everything is oily and garlicky and the bread is softened. Then puree in batches in a food processor until it is a mayonnaisy-tomatoey silken delight. Refrigerate for several hours and then taste for salt. Let me know what you think!
